"Sometimes they are highly valued as pets for show, but not for the game." Riley went on. "If the eggs were to hatch, they are property of the ADC and would likely be auctioned off like the rest of the dice because of Lexx's popularity, if he were to lose the game."
"Are they going to talk?" Chel's thoughts had drifted to Zeta and Epsy's imaginary chicks and what they might look like.
"I'm sure they'll learn." Riley shrugged it off as nonconsequential. "Most do, but talking doesn't mean they're sentient."

“talking doesn’t mean they’re sentient.”
????
He means they’ll be able to have a conversation, right? I can’t think of a better test of sentience.

I think there is a bit of disparity between what sentience means, and how it’s used here. I think the word intended is sapient.
Spikes
Being aware of ones own existence in any given space is how you differentiate sentient and nonsentient. Technically anything with a brain is sentient to a point. How sentient is another matter entirely.

there is the other option that he means they will learn words but not in the way we learn them. Think Parrots
